The Grecian Garden



This salad is crunchy, sweet, and super nourishing. It is perfect for a party because you can make it the day before the event, making it taste even better once it has had a chance to marinate. Sadly, I do not have a picture of this salad, but rest assured it looked beautiful! I use the slicer attachment with my food processor to get the vegetables very thin.


thinly-sliced red, yellow, and orange bell peppers (1 or 2 of each color, depending on how many you will be feeding)
1 thinly-sliced cucumber
1 small bag of thinly-sliced radishes
1 bunch of green onions, sliced (sometimes called scallions)
2 cups chopped tomatoes
1/4 cup finely-chopped fresh dill
1/4 cup finely-chopped fresh basil
1/4 cup finely-chopped fresh parsley
2 cloves of garlic, finely-chopped
1/2 tsp salt
1/4 tsp pepper
1/2 cup olive oil
1/4 cup lemon juice


Mix everything together except tomatoes. Taste it to make sure it has enough salt. Let marinate over night. Add tomatoes the day of serving. Feel free to double the dressing recipe in case you want more.
